One of our favourite oriental vegetables, bok choy (also known as Pak Choy) is a wonderful addition to any meal. It can be chopped up and eaten raw or cooked.
We bring a fry pan full of water with scape and lemon balm (or anything else) to a boil and cut the bok choy in half. Boil the cut end down until wilted and serve immediately. We like to top it with freshly ground black pepper or grated cheese du jour. Be creative – this is an extremely versatile vegetable which can be cooked many different ways – so fast, so easy, and so good for you!
