This salmon dish is super easy, healthy and delicious.

Ingredients

  • 1 1/2 lbs. of leeks
  • 1/2 c. of white wine
  • salt and pepper
  • 1 tbsp Dijon mustard
  • 1 1/2 lb. salmon filet
  • Unsalted butter

Guidelines

  • Preheat oven to 400f
  • Cut the roots off the leeks and trim all the dark green and tough leaves
  • Cut leeks lengthwise and chop
  • Rinse well in water to remove all the sand (you might need to do this several times)
  • Butter an ovenproof casserole big enough for the fish
  • Put the leeks into the casserole
  • Mix the wine, salt, pepper and mustard together and mix in with the leeks
  • Place the salmon over the leeks and sprinkle with salt and pepper
  • Cover casserole tightly with aluminium foil
  • Bake for 10-15 minutes until fish is cooked
