This salmon dish is super easy, healthy and delicious.
Ingredients
- 1 1/2 lbs. of leeks
- 1/2 c. of white wine
- salt and pepper
- 1 tbsp Dijon mustard
- 1 1/2 lb. salmon filet
- Unsalted butter
Guidelines
- Preheat oven to 400f
- Cut the roots off the leeks and trim all the dark green and tough leaves
- Cut leeks lengthwise and chop
- Rinse well in water to remove all the sand (you might need to do this several times)
- Butter an ovenproof casserole big enough for the fish
- Put the leeks into the casserole
- Mix the wine, salt, pepper and mustard together and mix in with the leeks
- Place the salmon over the leeks and sprinkle with salt and pepper
- Cover casserole tightly with aluminium foil
- Bake for 10-15 minutes until fish is cooked
