Crisp fall days call for crisp fall salads. Here’s an easy carrot and cabbage slaw with a bit of kick from jalapeño. A food processor will make quick work of shredding cabbage and carrot and will save you from scraping your fingers. I use the slicing blade for the cabbage rather than the grating blade to get a hearty texture.

Ingredients

  • 1 tbsp Dijon mustard                                                             
  • Juice of one lime
  • 1 chopped clove of garlic
  • 1 chopped jalapeño pepper
  • 3 tbsps olive oil
  • 1 small red cabbage shredded
  • chopped bunch of scallions
  • 2 grated carrots
  • 1/4 chopped peanuts

Guidelines

  • In a large bowl, combine the first five ingredients
  • Process the cabbage and carrot and add to the bowl.                          
  • Add the scallions and toss
  • Adjust seasoning as required
  • Top with peanuts just before serving
