Multiply deliciousness by topping lightly steamed green beans with cherry tomatoes grilled until they char and pop.
Add garlic croutons for crunch and make every bite a flavour bomb. It tastes great warm or cold.
Ingredients
- Green beans, rinsed and the tips snapped off
- Cherry tomatoes, rinsed
- Sourdough bread, slightly stale, cut into cubes
- Olive oil
- Chopped garlic
- Sea salt
- Oregano
Guidelines
- Preheat the oven to 450 degrees
- Place bread cubes into a large bowl and douse generously with olive oil
- Sprinkle bread cubes with oregano, garlic, and sea salt
- Spread the bread cubes on a baking sheet
- Toast the bread cubes in the oven until golden (approximately 10-15 minutes)
- Use the large bowl you used for the bread cubes and place the tomatoes in it. Toss them with the residual olive oil, oregano and sea salt, adding a bit more of each if necessary
- When the bread cubes are toasted, remove them from the oven and put the tomatoes on the same baking sheet
- Roast tomatoes 10-15 minutes until they start to soften or pop. For more char you can broil them lightly
- While the tomatoes are cooking, steam the green beans until done, but still crisp (5 minutes, approximately)
- Place the cooked green beans on a platter and top with the tomatoes and then the croutons
- Can be served warm or cold
