This is a perfect one pan dinner that is elegant and easy.
Ingredients for Carrots
- 1 lb. of carrots
- 1 tbs. of water
- 1 tbsp. butter
- 2 garlic cloves sliced
- 1 tsp. honey
- ½ tsp. chili powder
- ½ tsp. cumin
Ingredients for Pork
- 1 pork tenderloin
- 2 tsp. oregano
- 2 tsp. cumin
- 1 tsp. chili powder
- 1 tsp. smoked paprika
- 1 tsp salt
- 1 tbs. olive oil
Guidelines
- Pre-heat oven to 400
- Scrub or peel carrots and slice into thin batons
- Arrange on a baking sheet
- Mix water and spices for carrots and pour over the carrots
- Cover tightly with foil
- Bake 30 minutes
- While carrots are cooking mix olive oil with the spices for the pork
- Rub the spice and oil mixture on the tenderloin
- Heat oil in a large skillet and brown the pork on all sides, remove from the heat and put to one side
- After the carrots have cooked for 30 minutes, remove the foil, toss the carrots and place the pork on the baking sheet with the carrots around it
- Bake uncovered for 20 minutes until done and the carrots are caramelized
- Let the pork rest (tent with foil) for 10 minutes then slice and serve with carrots and any juices drizzled over
