Mexican night! Some assembly required.
Chili, pico de gallo, and all the fixins’: Nothing fancy, always a little different, and always very satisfying.
You can let Bryson Farms do most of the chopping by using their prepared, chopped veg.
Chili
Ingredients:
- 2 cans of black or red beans (or both)
- Large onion coarsely chopped
- 2-3 cloves of garlic coarsely chopped
- Bryson’s chopped peppers
- Bryson’s roasted tomatoes
- Bryson’s chopped sweet potato
- Brysons’s frozen corn
- 3 tbs. Chili powder
- Salt and pepper
- 1 tsp of sugar
- ½ tsp of cocoa powder
Guidelines:
- In a large pan, sauté onion and garlic in oil
- When the onion starts to become transparent and fragrant, add chopped peppers
- Add the spices and combine well
- Add the sweet potato
- Add the tomatoes and corn
- Let the chili simmer for the vegetables to cook (20-30 minutes)
- Drain the beans and add to the vegetables
- Allow the flavours to blend and adjust spices as required
- Serve with tortillas, guacamole, pico de gallo, grated cheese and lettuce
