Dinner just doesn’t get any easier than this delicious combo of salmon and crispy kale.
1 large filet of salmon
- Salmon marinade:
- ¼ c. maple syrup
- Large clove of garlic minced
- Juice of half a lemon, lime, or orange
- ¼ c. soy sauce or tamari
- Freshly ground pepper
- Kale
- Sea salt
- Olive oil
Guidelines
- Preheat oven to 425
- In a pie plate, mix the marinade ingredients and add fish skin side up
- Wash and strip the kale of stems and tear into bit size pieces
- Put kale on a baking sheet lined with parchment paper
- Generously douse kale with olive oil and sea salt until coated
- Nestle the salmon filet between leaves of kale
- Spoon some of the marinade over top of fish
- Bake for 10 minutes
