Dinner just doesn’t get any easier than this delicious combo of salmon and crispy kale.

Ingredients

1 large filet of salmon

  • Salmon marinade:
    • ¼ c. maple syrup
    • Large clove of garlic minced
    • Juice of half a lemon, lime, or orange
    • ¼ c. soy sauce or tamari
    • Freshly ground pepper
  • Kale
  • Sea salt
  • Olive oil

Guidelines

  • Preheat oven to 425
  • In a pie plate, mix the marinade ingredients and add fish skin side up
  • Wash and strip the kale of stems and tear into bit size pieces
  • Put kale on a baking sheet lined with parchment paper
  • Generously douse kale with olive oil and sea salt until coated
  • Nestle the salmon filet between leaves of kale
  • Spoon some of the marinade over top of fish
  • Bake for 10 minutes
