Summertime is all about tomatoes. This is quite possibly the most delicious thing to eat for breakfast, lunch, and dinner.
Ingredients:
- A ripe (but firm) tomato
- Olive oil
- Sourdough or other good bread (I used sourdough focaccia from Bread and Roses Bakery)
- Salt and pepper
- Fresh basil
- Goal cheese
Guidelines:
- Heat olive oil in a skillet
- Cut the bread in half and when the oil is hot put it face down in the skillet
- Cut the tomatoes into thick slices and place next to the bread in the hot skillet
- Top the tomato slices with crumbled goat cheese
- When the bread is golden (1-2 minutes) remove to a plate and top with the tomato and goat cheese which should be warmed, but not cooked
- Season with salt and pepper
- Garnish with shreds of fresh basil
